Beautiful Beet Brownies – Serves 6 Adapted from Canadian Gardening Fall/Winter 2010 • Oil for preparing pan • 6 tablespoons butter • 1 ½ cups bittersweet chocolate chips • ½ cup all-purpose flour • ½ teaspoon cinnamon • ¾ cup golden brown sugar • 2 large eggs • 1 teaspoon vanilla extract • 1 cup peeled and finely grated red beets (about 2 medium) Pre-heat oven to 350° F. Oil pan (8-inch square baking pan) and line the bottom with parchment paper. Melt butter in a large bowl. In a separate bowl, melt chocolate over a pot of hot water. Stir flour and cinnamon together in a small bowl and set aside. Beat sugar with melted butter. Add eggs, one at a time, beating constantly, then add chocolate and vanilla and beat until just blended. Add flour mixture and beat vigorously for 1 minute, until batter is smooth and glossy. Add beets and stir until thoroughly blended. Spread batter evenly into prepared pan. Bake on middle rack of oven for 30 minutes, or until a knife inserted in the centre of the pan comes out clean. Cool completely before turning out brownies and cutting them into squares.
